I can’t attest to microgreens, but I can tell you that when we went down the route of sap testing, as per @john.kempf methods, and understanding more about the trace elements, we found that our fruit became firmer, and had significantly more shelf life.
I think learning and understanding the structure of the plant and its requirements at a specific time has made a difference and made me look at all of what we grow with the view of better nutrition will have an impact.
Microgreens are quite different I guess because of their sow to harvest time frame but if you follow the same methods each time, wouldn’t having just one sap analysis done to get a snapshot because the time it takes to get the result may not work with you, but you get a couple done to get that snapshot of what’s happening.
