I bought the book that Beddoe wrote and its quite good. Covers a lot of what you are looking for. I am not sure if you can still get it as both Pike and Beddoe have passed.

The taller, deeper rooted cover crop has been laid down. The clover and vetch is still growing.

Not fresh roots, but in a lecture I was listening to about Rhizophagy, James White talks about Iroquois (and likely all native americans) making “corn medicine” by making a brew of the previous years corn crop roots and inoculating the seed for planting with it, alongside ceremony and other additives and herbs unknown.
