On my reading of your results (and I am by no means an expert) your potassium is moving from the old to the young so you have a shortage coming in to the plant.

I am not an expert on sap analysis – although we use them for our strawberries and notice different things at different times of the season.

One of my friends with a pecan orchard never sprays but just mows things as short as he can before harvest.
