    this is really something that I am looking into also… In winemaking we have to really learn to be honest! for me, when we talk about YAN, nitrogen levels in the must and fermentation, we talk about slow fermentation, especially when it is about natural wine (in terms of not adding any extra-yeast)! and when we talk about slow fermentation, we talk about Brett being able to conquer the scene and who knows how many other defects! I am totally convinced that it is nutrient deficiency in the vineyard, in the vines and in the grapes, that are the problem. Is there a way of listening/seeing the workshop/webinar?? Personally I would ask you folks about where to find out more about nutrient deficiency in vines in alkaline and sandy soils and how to go about it! I am having a hard time with implementing regenerative practices due to cost of the right tools and supplements and the believe of my partners, that animals will be the answer to it all! I would be very thankful for any answer and discussion we could get into
