I have auto-immune disease and have problems with inflammation, and there are only a few that I have been able to eat. First, I do really well with Millet and Rice. I have not done well at all with Kamut, though I was excited to try after reading Bob’s book. Just didn’t work out well for me. I haven’t tried Einkhorn yet, but I did try Hourani wheat (ancient grain from Jordan) and if prepared with a natural fermented sourdough starter, I can tolerate it in small amounts. All other grains so far have not worked for me.
